Easy High Protein Veggie Soup

1 28 oz can diced tomatoes
1 15oz cans of Kidney beans ( drained)
1 large Zucchini diced
1 c carrots
2 c mushrooms
1 large red bell pepper diced
2 bags Beyond Meat grilled chicken strips
5 c vegetable broth
1 tbsp Italian seasoning
salt and pepper to taste
Put all ingredients in the slow cooker for a few hours or simply toss in the Instant Pot and cook for about 10 minutes. THAT SIMPLE!
This recipe is an oldie but since the weather here in So Cal has been cold and rainy for what feels like an eternity , I figured I would throw it up in the files.
