Tacos that fit your healthy plan? What?!

This recipe is so simple , healthy and delicious!
Serves 2
4 Corn tortillas
6 oz firm Tofu
2 c chopped red cabbage
2 tbsp chopped cilantro
1/4 lemon wedge
1/4 c cashew cheese sauce (recipe below)
1/2 tsp salt free taco or chipotle seasoning
* Cashew cheese sauce recipe
1/2 c soaked cashews
1/2-3/4 c water (depending on the consistency you prefer)
2 tbsp nutritional yeast
1/2 tsp Himalayan salt
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp chili powder
1/2 tsp liquid smoke or hickory
Blend all ingredients in VitaMix / Blender until smooth
Cube tofu and sprinkle with taco seasoning . Brown lightly in pan or cook in air fryer for 15 minutes at 400 degrees.
Warm tortillas in skillet until slightly crispy.
Fill with tofu, red cabbage, cilantro and top with cashew cheese sauce and a squeeze of lemon.
