These days I'm all about quick, easy & healthy cooking. This peanut crusted Tofu is so good you'll hardly believe it takes only 15 minutes to prepare!

Serves 2

6 oz Extra Firm Tofu (sliced)

1/4 c PB2 ( peanut powder)

1 tbsp Sriracha chili sauce

1 tsp Stevia

1/2 tbsp Soy Sauce or Coconut Aminos

1/4 c water

1 tbsp dehydrated chopped onions

1 c Shelled steamed Edamame

2 c Steamed Broccoli

Slice tofu and coat with PB2 powder . Cook coated tofu in air fryer for 15 minutes at 400 degrees.

Mix soy sauce, stevia, sriracha and water with remaining PB2 left from coating the tofu to make the peanut sauce.
